Bread first
Begin at a neighbourhood bakery before trays empty. Look for kalitsounia, rusks and pies that correspond to the day rather than an all-season display. Eat one warm; carry another for later.
Read a pantry
A serious food shop should be able to name its oil, honey and cheese producers. Ask for one comparison—two thyme honeys or two gravieras at different ages—and the island’s geography starts to become legible.
Finish at a small table
Order several modest dishes rather than a procession of signatures. Greens, legumes, cheese, one meat or fish and seasonal fruit reflect the structure of Cretan eating more clearly.
